How Lucky Are We?!

As last summer slipped away, Family & Aging Law Center welcomed a very special person to our team ~ and we couldn’t be more excited!

Without further ado, we’d like to introduce our Relationship Management Director; Victoria Simcheck. Not only is Victoria an incredibly vibrant person with a giving heart, she’s also had some amazing experiences and she’s taught us some pretty cool stuff. We thought it would be great to share some of these with you!

The Land Down Under

Many of us move a time or two during our lives, but Victoria actually lived in Australia for two years. “Moving to Australia was the biggest impulse decision I’ve ever made. Within about four weeks, I found a job there; made living arrangements; quit my job at Walt Disney World; packed my suitcase and moved across the world!”

“Port Hedland, where I lived, is in the far Northwest corner in the state of Western Australia and it’s about an 18-hour drive north of Perth (the closest ‘big’ city). Target was a two-hour drive away and there wasn’t one movie theater even remotely close. This small coastal town is best known for its iron ore mining and horseraces ~ Kentucky Derby style, with hats and dresses! There were amazing people, incredible fresh food and the most breathtaking sunsets and beaches I’ve ever experienced”.

“One of the many stand-out moments during my time there, was getting to snorkel in the Great Barrier Reef. Pictures and words don’t come close to describing it. To say the least, it was an extraordinary and unforgettable adventure”.

Quirky Surprise

You might be surprised to know that Victoria is a classically trained ballerina (yes, we’ve got a crush on her), but we didn’t know that she LOVES adrenaline! Traditionally, people like Victoria shine at keeping many things on track and helping to ensure all bases are covered. So, we were stunned to find out that she also loves things from swimming with sharks in open water, to looking through the floor Chicago’s glass-bottom Skydeck; and says, “The taller, the faster, the scarier, the better!”

Better Believe It

We asked Victoria what she’s learned so far from working with; that’s really stuck in her mind.

“One thing I’ve learned is that you can never start planning too early. Even for me being on the younger side, in the grand scheme of life, having [estate planning] documents in place ~ is essential.” Victoria explains, “Also, you really don’t know what you don’t know.”

Life-Hack

Victoria shared with us, one of her go to multi-tasking powerhouse staples; Apple Cider Vinegar (ACV). “ACV is the BEST nontoxic house cleaner!” As she explains it, ACV also has many potential health benefits; here are just a few:

·         Can kill many types of bacteria that can cause the common cold or flu

·         May lower blood sugar levels and fights diabetes

·         Helps to lose/ Maintain weight

·         Lowers cholesterol and reduces your risk of heart disease

·         Promotes healthy detoxification of the liver and other organs

·         Digestive aid

·         Energy booster

Here are two ways Victoria enjoys her ACV everyday:

1. Chilled & Ready –

1/3 c. ACV

1/3 c. raw honey

16 oz. warm water

Add ACV, raw honey, and warm water to a large water bottle. Shake until honey completely dissolves. Place in fridge for a few hours, or until chilled. Enjoy!

2. Tea Time –

3 Tbsp. ACV

3 Tbsp. raw honey

8 oz. hot water

Place all three ingredients in your favorite cup or mug. Stir to mix well. Victoria says, “It’ll taste like an energizing cup of tea!”
